"The quality of food from ruminants is of great importance for food production, food security and the health of the population, and is directly related to the diet the animal receives. The nutrition of this class of animals faces challenges related to rumen biodegradation and oxidative processes, especially when it comes to lipids, which are essential for energy metabolism. In this scenario, microencapsulation is a strategy used to benefit lipid supplementation in animal feed. However, there are measures to be considered for the process, such as the most appropriate encapsulation technique. The present study aimed to present the gains that lipid nutrition generates in the diet of ruminants and in the quality of derived products, and how microencapsulation by Spray Drying can improve the digestion of these animals."
